Squash Your Disgust for Zucchini!
Here's yet another gluten free appetizer to bring to any party, event, or just dinner! We made these for dinner tonight, along with a steak salad, and were very impressed! Here's the simple recipe that anyone can enjoy:
Ingredients:
3 cups grated zucchini
1 cup GF Bisquick
4 slightly beaten eggs
1/2 cup grated parmesan cheese
2 tbs parsley
1/2 tsp salt
dash of pepper
1/2 cup vegetable oil
Directions:
1. Mix all ingredients in a large bowl.
2. Spread into a 13x9 pan.
3. Bake approximately 25 minutes (until golden) in a 350 degree oven.
4. Cut into squares or triangles.
5. Let cool and enjoy!
